I want tender chicken, gooey cheese, and a crispy tortilla when I’m eating a buffalo quesadilla. This simple recipe contains simple ingredients – just how I like it.

Buffalo Chicken Quesadillas can be an easy lunch or the star of your appetizer spread before the big game. 

Many of my favorite foods include buffalo sauce, which is why I share so many recipes with buffalo sauce here. Baked Buffalo Chicken Egg Rolls, One Pot Buffalo Chicken Pasta, Buffalo Sauce Meatloaf Recipe… the list goes on.

I know many people are fans of Frank’s Red Hot, but I am a fan of my homemade buffalo sauce recipe.

Use whatever tangy buffalo sauce you think has the best buffalo flavor; when combined with the gooey melted cheese, you’ll be happy, no matter what! Add additional buffalo wing sauce if you’re a fan like me – I think we can agree it has the best flavor.

To freeze, wrap each separately and freeze in a ziplock bag for up to three months. When you’re ready to eat one, let it thaw completely, and then follow the cooking instructions.

How to Store Leftover Buffalo Chicken Quesadillas

Store in an airtight container in the fridge for 3-4 days. Reheat the leftovers in the oven to 350 degrees for 15 minutes.

  • 2 cups shredded chicken
  • 2 cups mozzarella cheese, shredded
  • ½ cup buffalo sauce
  • ¼ blue cheese crumbles
  • ⅓ cup green onions, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a medium mixing bowl, combine shredded chicken, buffalo sauce, and bleu cheese, then set aside.
  2. In a large skillet, heat olive oil on medium heat until the pan is hot. Place a tortilla shell on the skillet, then sprinkle a handful of cheese on one half.
  3. Cover the cheese with the buffalo chicken mixture and some green onions, then top with more mozzarella cheese. Fold the quesadilla in half, then flip it so the cheese melts evenly.
  4. Repeat until all the quesadillas are made. Cut in half, then serve hot.
