With this delicious Overnight Blueberry French Toast Casserole, you can have a delicious breakfast without all the fuss!

Breakfast is the most important meal of the day, but many people struggle to eat a wholesome breakfast each morning.

Blueberry French Toast Casserole is a sweet, fruit-flavored breakfast casserole that makes your morning breakfast quick and easy.

Instead of dipping bread in an eggy mess and frying it on the skillet while you are trying to do 50 million other things, you can simply make this casserole the night before and plop it into the oven.

Blueberry French Toast Casserole Ingredients

You will need a few essential ingredients to make this breakfast casserole. Here’s what you need:

  • French bread. You can use any type of thick bread, but I prefer French bread. I have used both stale and fresh French bread and both work well. 
  • Mascarpone cheese. If you don’t have Mascarpone cheese, you can use cream cheese instead. 
  • Blueberries. I personally love blueberries, but you could try other fruit as well such as strawberries or blackberries. 
  • Half and half. If you don’t have half and half, you can use a mixture of cream and whole milk instead. 
  • Honey. For a sweeter casserole, you can substitute the honey for brown or granulated sugar. I like brown sugar.

What is Mascarpone Cheese?

Mascarpone cheese is a creamy, soft, and lightly flavored type of cheese. It is very similar to cream cheese.

Mascarpone cheese goes very well with breakfast dishes and fruit such as blueberries. The fruit and cheese tend to complement each other.

You may find that Mascarpone cheese is a little harder to access and is pricier than cream cheese. 

I have made this type of casserole with cream cheese in the past. It works just as well.

So, if you cannot find Mascarpone cheese for this recipe, just use cream cheese, instead.

In addition to the above ingredients you will need the following ingredients to complete this deliciously, sweet blueberry French toast casserole:

  • French bread (~1 loaf French bread)
  • Mascarpone cheese
  • fresh blueberries
  • eggs, lightly beaten
  • half and half
  • honey
  • lemon juice
  • vanilla extract
  • cinnamon
  • nutmeg
  • blueberry syrup

How to Make Overnight Blueberry French Toast Casserole

Follow the simple steps below to make breakfast in the morning stress free:

Step 1: Prep

Prepare a 9X13 baking pan by spraying it with cooking spray. Set aside.

Step 2: Slice Up French Bread

Cut or break up the French bread into small 1-inch pieces and arrange bread as a bottom layer on the baking pan.

Step 3: Add Cheese and Fruit

Using a tablespoon measuring spoon, scoop out the Mascarpone cheese and place the dollops evenly over the bread layer.

Then, sprinkle one cup of the blueberries evenly over the mascarpone cheese and cubed bread. Set aside.

French toast ready to get in the oven

Step 4: Create Egg Mixture

Mix together the eggs, half and half, honey, vanilla, cinnamon, and nutmeg in a large bowl.

Pour the mixture into the baking pan, making sure to cover all of the bread. Cover the baking pan and let it sit in the refrigerator overnight.

Step 5: Bake

The next morning, preheat the oven to 350 degrees Fahrenheit and bake the casserole covered in aluminum foil for 25 minutes and then uncovered for another 30 minutes, or until bubbly.

Drizzle the syrup over the casserole when it comes out of the oven. Plate and enjoy!

Can I bake this the same day?

This recipe calls for you to place it in the refrigerator overnight before baking.

However, if you want to bake it on the same day, you can.

Once the dish is prepared, cover and put it into the refrigerator for at least an hour before baking. This will allow all the ingredients to soak into the bread.

How to Store Leftover Overnight Blueberry French Toast Casserole

If you have leftover French toast casserole, you can store it in your refrigerator for 3-days.

To store it, place it in a tupperware container with a lid and place it in the fridge.

You said you prefer brown sugar to honey, but the recipe calls for honey. Do you use the same amount of brown sugar?
