Hot Pimento Cheese Dip

My favorite recipes are the ones that I create unexpectedly. Like this hot pimento cheese dip.

I really wanted to make a fun grilled cheese sandwich and I got this crazy idea to throw pimento cheese and bacon together. Since you can see that this is an appetizer recipe you can imagine how well that went.

I made a yummy pimento cheese, put it between some bakery bread and got to toasting.

When the cheese melted out of the cheese and stuck to the pan instead of the bread, I knew I needed to go back to the drawing board. I put the remaining pimento cheese into a container and “shelved” my idea in the fridge while I did some more brainstorming.

The next day came. We went about our morning and afternoon routine and then Mr. B. went to work. When I went to figure out my next pimento cheese recipe, I couldn’t find the container that I had shoved into the fridge.

Turns out Mr. B took it to work with a bag of tortilla chips I had lying around. When he came home with the empty container he told me he and his coworkers devoured it. Problem solved.

Hot Pimento Cheese Dip

As much as Mr. B and his coworkers liked this pimento cheese dip recipe as is, I knew it still needed a couple tweaks to be a fantastic party dip. After a few taste tests, we decided that crispy bacon and fresh green onions were what was missing.

We have eaten this cheese dip hot and cold and while we liked both versions, the hot and steamy one was our favorite. Also, you can make it pretty quickly. It heats up quite fast in a small crock pot or a small pot and the pimento cheese can be made the night before.

Most of your ingredients get thrown into a food processor or blender and are combined that way. I like to roughly chop up the pimento peppers first and use shredded cheese because I find that easier.

If you want to use full peppers and cheese chunks you can do that too.

After all of your ingredients are well mixed, use a spatula to transfer everything to a small crock pot or a medium-sized pan. Heat on low and stir often. When the dip is smooth, turn off heat and mix in the bacon and green onions. Top with some diced pimentos and serve with tortilla chips.

Ingredients

  • 8 ounces cheddar cheese shredded
  • 8 ounces cream cheese
  • 1 cup pimentos chopped (approximately 3 pimento peppers)
  • 1 tablespoon mayo
  • ½ tablespoon paprika
  • ½ tablespoon Worcestershire sauce
  • 2 teaspoon dijon mustard
  • 1 cup diced green onion
  • 1 cup diced cooked bacon

Instructions

  • In a food processor or blender, combine the cheddar cheese, cream cheese, pimentos, mayo, paprika, mustard and Worcestershire sauce. Pulse until well combined.
  • Transfer to a small slow cooker and heat on high for 1 hour, stirring occasionally.
  • When the pimento cheese dip is hot and smooth, turn off the heat and stir in the bacon and green onion. Serve hot with tortilla chips.

Notes

You can also heat this dip in a small pan over medium heat.
