This post has been sponsored by MorningStar Farms®. All thoughts and opinions are my own.
All over the interwebs I see posts about “brinner.” In case this is the first time you’re hearing this word, it’s a mashup of breakfast and dinner. I see so many pictures of people eating pancakes or waffles at night.
But what if you’re like me – a dinner-loving, lunch-craving, sandwich eater? The solution – dinner for breakfast.
My favorite dinner-for-breakfast these days is a breakfast black bean burger. It’s the perfect breakfast solution for the sandwich obsessed.
MorningStar Farms® Spicy Black Bean Burgers are my favorite veggie burger and are the base of my breakfast burger. They’re delicious black bean burgers and have 65% less fat than regular ground beef patties and 9 grams of protein. When I was making the switch to a more plant-based diet, MorningStar Farms® Burgers were my go-to and still are.

How to make a Breakfast Black Bean Burger
To get started, cook your black bean burgers. There are several ways to do this – a pan, the microwave, an oven, and my favorite, a grill. Thank goodness for gas grills – they make it so easy to grill up a burger in the morning.

While the burger is cooking, I fry up some bacon and an egg. I make a sunny-side up egg but you could easily substitute scrambled or poached eggs if that’s your jam.

Instead of a bun, I use an English muffin ’cause they make me think of breakfast. Bagels are also awesome for breakfast burgers.
A slice of white cheddar, some mashed avocado – you’re good to go!
Pro-tip: If you mash the avocado before you’re ready to serve breakfast, add a little lime juice to the mashed avocado to keep it from browning.
