Preheat a medium skillet or griddle over medium-low heat. Whisk together eggs, milk, ground cinnamon, vanilla extract, and a pinch of salt in a shallow bowl.
Add 1 tablespoon of butter to a skillet or griddle and allow to melt, being careful that it doesn’t burn.
Dip a slice of bread in the egg mixture, letting it soak until it is covered on both sides.
Place soaked bread onto the hot skillet and fry on each side until golden and cooked through for about 1-2 minutes.
Repeat with each bread slice, adding butter to the skillet as needed.
As desired, serve hot and garnish with fresh blueberries, pecan pieces, and maple syrup.
