Ingredients

  • 8 slices bread cut thick (brioche is my favorite)
  • 4 large eggs
  • cup whole milk
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • butter
  • pinch of salt

Instructions

  • Preheat a medium skillet or griddle over medium-low heat. Whisk together eggs, milk, ground cinnamon, vanilla extract, and a pinch of salt in a shallow bowl.
  • Add 1 tablespoon of butter to a skillet or griddle and allow to melt, being careful that it doesn’t burn.
  • Dip a slice of bread in the egg mixture, letting it soak until it is covered on both sides.
  • Place soaked bread onto the hot skillet and fry on each side until golden and cooked through for about 1-2 minutes.
  • Repeat with each bread slice, adding butter to the skillet as needed.
  • As desired, serve hot and garnish with fresh blueberries, pecan pieces, and maple syrup.

Notes

You can substitute butter with cooking spray.
