Who’s ready for summer!? I sure am.

The sun is out, the weather is getting warmer and all I can think about is sitting by a lake. I want to look out at the water, relax, and maybe eat and drink a little.

One thing I don’t want to do is get stuck in the kitchen. It’s hard to “say yes to summer” if you’re cooped up in the house.

First, you need a bag of your favorite Doritos. My favorite flavor is Nacho Cheese – all that cheesy, crunchy goodness in one bag!

Next, you need a little grill. This step can be skipped if you are going to be out on a boat; the grill is just used to heat up the shredded cheese and any meat you choose. I tried both ways and these nachos are delicious when the shredded cheese is or isn’t melted.

Then you need your toppings. The main toppings I used are Chihuahua cheese (the kind used in quesadillas) and some ground beef. If you are short on time, you could also pick up a rotisserie chicken and shred the pre-cooked meat on top of the Doritos.

I also stopped at my local grocery store and bought some pre-made guacamole and pico de gallo. Since my goal is to spend less time in the house and more time at the lake, pre-made dips are where it’s at.

I picked up a few fresh jalapeños, green onions, and sour cream and quickly diced them up while I was cooking the ground beef. Leave your pans at home and opt for a foil cooking pan that can be thrown away when you’re done eating. Less mess, more fun!

Pour the Doritos onto the pan and then sprinkle the shredded cheese and cooked meat on top of the chips. Put it on your grill for 5-10 minutes or until the cheese is melted. Carefully take the pan off the grill – it’s going to be hot – and place it on a table.

Time to pile on the toppings! You can put everything on top at once or keep it on the side so you can pick and choose your toppings.

Quick Summer Doritos Nachos

Ingredients

  • 1 bag Nacho Cheese Doritos
  • 1/2 pound ground beef, cooked
  • 1 cup shredded Chihuahua cheese

Toppings

  • pico de gallo
  • guacamole
  • diced jalapeno
  • diced green onions
  • sour cream

Instructions

  1. Place your Doritos chips in a foil cooking tin. Sprinkle the shredded cheese and cooked ground beef on top.
  2. Put the tin on a hot grill and cover the grill. Heat the cheese and meat for 5-10 minutes, or until the chips begin to crisp and the cheese is melted. Carefully remove from grill - cooking tin will be hot.
  3. Add your favorite toppings and eat hot.

Notes

Shredded rotisserie chicken can be used in place of ground beef.

Can also be enjoyed without heating.
