I feel bad for my neighbors, both upstairs and next door. For the last week, I’ve been testing this clear garlic soup recipe, and as the title may suggest, it has a pungent flavor.

On the plus side, I have banished any vampires that may have been residing near our home.

While it doesn’t specifically mention hangovers, it does say that garlic may be used to help prevent food poisoning. I’ve always thought a good bender was akin to poisoning yourself.

This soup contains a lot of garlic.

At first, it may seem like too much, but the slow cooking of the garlic in oil/butter, followed by a simmer in broth, really draws out the flavor of both and then mellows it out. If you’ve ever made French onion soup, it is very similar to that process.

Like a French onion, the soup ends up being very balanced. At first, you will have some seriously teary eyes when cutting the onions and garlic.

But, believe me – it’s totally worth it. I suggest serving it with some crusty bread or homemade croutons.

Once, I decided to have a bowl of garlic soup for breakfast one day after a workout (yup, no joke.) I brought it to a boil and then dropped in two raw eggs. Once the eggs were poached, I was ready to eat.

How to Make This Easy Garlic Soup Recipe

Grab a medium-sized soup pot and put it on the stove over low heat. Toss in the butter and a splash of olive oil.

Once the butter melts, add those finely diced onions and minced garlic. We’re going to cook them low and slow for around 20 minutes. We want them to soften up nicely without getting browned.

After softening onions and garlic, sprinkle in the flour and stir it in. Let it cook for a couple of minutes. This helps the soup get a bit thicker and removes the raw taste of the flour.

Slowly pour in the chicken stock or broth, followed by the water. Don’t forget that touch of white vinegar and a pinch of salt. Give it all a good stir to blend everything together beautifully.

Crank up the heat a bit to get things bubbling gently. Once it reaches a boil, lower that heat down to a simmer. Let the soup hang out and simmer away for about 30 minutes. That’s the time it needs to get all cozy and flavorful.

Ingredients

  • 4 cups chicken stock or broth
  • 2 cups water
  • 1 cup of finely diced white onion
  • 5 tablespoons finely minced fresh raw garlic (1 head of garlic)
  • 3 tablespoons white vinegar
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • black pepper to taste

Instructions

  1. Heat the oil and butter in a medium soup pan on low.
  2. Add the onion and fresh garlic to the pan when the butter has melted. Cook the onion and garlic for 20 minutes until soft (but not brown.)
  3. Add the flour and stir. Cook for 2 minutes on medium heat, then add the chicken stock, water, vinegar, and salt. Stir well.
