Easy Potato Chip Nachos (Irish Nachos)

Every year, I get really into football. It’s a big joke (to myself) because I can’t decide what I like more – the game or the food.

Game day recipes are seriously my favorite.

These easy potato chip nachos are fabulous, better than traditional nachos (that use tortilla chips), and you can use any of your favorite nacho toppings.

How to Make Potato Chip Nachos

Grab a bag of your favorite potato chips. You can use regular ridged potato chips or thick kettle chips – whichever is your favorite.

Both types of chips will hold all the toppings better than thin potato chips and, in my opinion, tortilla chips. 

Pour the kettle potato chips onto a large microwaveable plate. Then sprinkle shredded cheese on top – make sure you use plenty of cheese for that cheesy goodness. 

Place the plate in the microwave in 30-second increments until the cheese is completely melted. Pull the plate from the microwave and top the cheese with your favorite toppings.

If you are anti-microwave, put the chips on a baking sheet lined with parchment paper and broil the cheese for a few minutes. Remove the sheet pan when the whole pan is full of cheesy chips. 

Seriously, it’s that easy.

You may even be wondering why you haven’t thought of this yourself. But that’s what I’m here for.

Irish Nacho Toppings

When I made Sheet Pan Loaded Chicken Nachos, I used every topping I could imagine to create a unique recipe. For these nachos, I suggest using your favorite things.

I start with cooked ground beef and black beans. Then I go a little crazy. 

My suggestions include diced tomato, pickled jalapeno slices, chopped cilantro, and red onion. Suggestions for additional fun toppings include:

  • sour cream
  • green onions
  • ​bacon bits

Easy Potato Chip Nachos

Yield: 8 servings
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients

  • 5 ounces potato chips
  • 1 cup shredded cheddar cheese
  • ½ pound ground beef, cooked
  • 1 can black beans, drained and rinsed

Toppings

  • diced tomato
  • jalapeno slices
  • chopped cilantro
  • diced onion

Instructions

  1. Pour the potato chips onto a microwave-safe plate. Top the chips with the shredded cheese. Place the plate in the microwave and cook in 30-second increments until the cheese is melted. Remove the plate from the microwave.
  2. Spoon the ground beef and black beans on top of the melted cheese.
  3. Then, place your selected toppings on the chips liberally.
