Asparagus and Cherry Tomato Salad

Ditch the winter blues with an Asparagus and Cherry Tomato Salad. Made with roasted asparagus, fresh lemons, cherry tomatoes and marinated artichokes hearts. This salad is topped off with a light, bright and easy homemade lemon vinaigrette.

What I’d like to share with you today is an easy salad – Asparagus and Cherry Tomato Salad. It’s quick to make with roasted asparagus, tomatoes and artichokes.

Dressed with a flavorful and easy lemon vinaigrette, it’s fresh and delicious!

I live in Fresno California. The fertile central valley in California boasts amazing produce and right now citrus is in season!

Nature’s Bounty! These are meyer lemons harvested from my Mom-in-Law’s tree. They are so sweet it’s amazing.

Because citrus is in season, I know you’ll find some great citrus at your store also!

Asparagus and Cherry Tomato Salad – Grocery List

  • asparagus
  • cherry tomatoes
  • marinated artichoke hearts
  • lemons

Not only is this salad incredibly fresh and delicious, with only a handful of ingredients it’s super easy too!

I pride myself in sharing tried and true side dishes, many that have been passed down from generation to generation.

But this recipe?…. It was inspired by visit to my market. 😀

My grocery store has a great deli department with bowls full of delicious salads.

They offered a similar salad and I thought it would be a great recipe to develope. I think you are going to love this as much as I do.

Tips to make an Asparagus and Cherry Tomato Salad

  • This salad is best served at room temperatures. Refrigerate leftovers and before serving remove from the fridge and bring to room temperature.
  • Microwave or heat the honey to make it easy to drizzle. It will be easier to emulsify when whisky into the vinaigrette.
  • No honey to sweeten the vinaigrette? Substitute agave or maple syrup
  • Leftovers top off grilled chicken or pork deliciously!

Asparagus and Cherry Tomato Salad

Yield: 6
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Asparagus and Cherry Tomato Salad - Roasted asparagus, fresh lemons, sweet cherry tomatoes and marinated artichokes hearts are topped off with a light, bright and easy lemon vinaigrette.

Ingredients

  • 1 pound asparagus
  • 1 cup cherry tomatoes, sliced
  • 1 cup artichoke hearts, marinated
  • 3 lemons
  • 1 tbsp olive oil
  • salt and pepper

Vinaigrette

  • ¼ cup lemon juice
  • ¼ cup honey
  • ⅓ cup olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ⅓ cup parmesan, shaved

Instructions

  1. Preheat oven to 375 degrees.
  2. Clean the asparagus, remove the tough ends. Slice into two inch pieces
  3. Drizzle asparagus with olive oil. Sprinkle with salt and pepper. Spread on a baking sheet and roast in the oven for 10 minutes. Remove from pan and place in a large bowl.
  4. Slice one lemon in half and squeeze the juice. You'll need ¼ cup juice. Take the remaining lemons and slice into wedges. Combine with the cooked asparagus.
  5. While the asparagus is roasting, clean the tomatoes. If any are oversized, slice in half. Add to the bowl with the asparagus and lemons.
  6. Drain the artichoke hearts and place them in the salad bowl.
  7. Mix the vinaigrette. Drizzle over about half over salad and toss well to mix the ingredients. Refrigerate remaining vinaigrette for another use.
  8. Sprinkle the parmesan shavings over the top. Serve and enjoy!

Notes

Leftovers can be refrigerated. This is a great make-ahead salad. It's perfect for a buffet or bbq because it doesn't contain any mayonnaise.
